A simple Brinjal Masala, a good combination with chappathi, rice etc...
Ingredients:-
Brinjal (cut into 1 inch pieces) - 250 gms
Onion -
1
Fresh Curry leaves -
a few
Green chilli (slit) -
1
Ginger garlic paste -
1 tbsp
Tomato -
1
Turmeric powder -
¼ tsp
Red chilli powder -
1 tsp
Garam Masala -
½ tsp
Coriander Leaves -
1 tbsp
Salt to taste
Hot water -
1 cup
Oil -
1 tbsp
Method:-
Heat oil in a pan ; sauté curry leaves, chopped onion and
green chilli.
Add ginger garlic paste.
Once the raw smell is gone, add chopped tomato.
Keep the lid closed and cook until the tomato pieces are
blended well.
Add Turmeric powder, Red chilli powder and garam masala.
Add Brinjal pieces and fry for 2 minutes.
Then add 1 cup of hot water and mix well.
After 2 minutes, keep the flame low and cook for another 15
minutes. Stir in between.
Garnish with coriander leaves .
Serve hot with Chappathi,
Roti etc.
