Crispy French Fries/Potato Fries

 Yummy, Crispy Homemade French Fries. It is very very simple to prepare at home. Only certain things have to be taken care. Here I am sharing with you all of them clearly....Try them yourself and Njoy!!!


Peel the Potatoes neatly.
·        Cut it into long strips like this.
·        After cutting, wash them thoroughly using cold water until the water turns clear. This is to rinse off any excess starch.
     
     Soak  the potatoes in cold water.
·        Add a tbsp of lime juice (this is to avoid discoloration) and then a few cups of ice cubes (to chill the water thoroughly. Keep it in the fridge for about 30 minutes. 

     
     Chilling Potatoes will prevent the outside of fries from getting too brown too quickly. 

Now, lets come to the cooking part...
We have to fry the potatoes twice. 



  •         Once at a lower temperature, so that the inside of the potato gets cooked;
  •         and then a 2nd time at a higher temperature, which is when the fries turn golden brown and crispy.


From my experience, it’s always better to use any sunflower oil for frying the potatoes.

Now the steps continues.....




  •        Drain the potatoes from the ice water and dry them using a clean kitchen towel.
  •       Heat oil in a deep wide pan over medium-low heat. Fry the potatoes for 8 to 10 minutes until they are soft and become a slightly golden colour.  Add salted water little by little to the oil carefully at this time.
  •  

  •         Remove from the oil and transfer them to tissue papers.
  •         Then refrigerate again until you are ready to use them or for at least 15 minutes.
  •         Heat oil and return the fries to the oil and cook for another 3-4 minutes or until the fries are golden brown and crispy.    

  •         Drain on clean paper and serve right away.
