Bhatura / Deep fried fluffy breads






Bhatura is traditional North Indian deep fried bread. These soft , sponchy and fluffy breads are well suited with Channa Masala. At most of the restaurants, this is known as Channa Bhatura. Here i am sharing with you a simple recipe to make Bhatura at home with minimal ingredients.










Ingredients:-
All purpose flour                              - 250gm
Egg                                                         - 1
Curd                                                      - 1 tbsp
Sugar                                                     - 1/2 tsp
Salt                                                         - to taste.
Baking Soda                                        - 1 tsp
Oil                                                           - 1 tbsp
Water                                                   - to make the dough
Oil for deep frying
Method:-
Take the flour in a big bowl.
Add egg and curd to the flour.

Dissolve baking soda, sugar and salt in 4 tbsp of water and mix it with the flour.

Knead well by adding water and 1 tbsp oil to get a soft dough like this....

Cover the dough and keep it closed for 3-4 hours. The dough should become almost double in size.
Make balls (a little bigger than chappathi balls) out of the dough.

Flatten each dough ball to get  6-7 inch circles. Use dry flour to help rolling.

Heat oil in a deep pan . To check if the oil is enough hot, put a small piece of dough into the oil. If it floats to top right away, the oil is ready for frying.
Slide each flattened battura into the oil carefully, one at a time.
It will start bubbling like this....Gently press to help puffing...

Turn the side when one side is done.

Fry till both sides become golden brown in colour.
Once it is done, take it out and place on paper towels to absorb extra oil.
Repeat the same with each dough ball.
Fluffy, chewy Bhaturas are ready!!!


Tips:-
Make sure to add enough oil for deep frying battura. If the oil is less, battura will become greasy.
If the oil is not so hot, then also battura will become greasy.
