Pineapple Fresh Cream Pudding


 

Yesterday was a special day for me.My hus and my lil princess share their b’day this day. She turned two and my hus turned __( sorry, no age disclosing here!!!  J  . Double occasion demanded something very special and finally I decided to try out a very special dessert, something very new and something very vibrant. So here is my recipe for a yummy Pineapple Fresh Cream pudding!!







Pineapple Fresh cream pudding has 4 layers. I have given each layer description separately for

      better understanding.

1st Layer (Bottom Layer)

 
 
1)      Ripe Pineapple                   - 1

2)      Sugar                                      - 3 tbsp
Method:-
       ·         Cut pineapple into small pieces. Remove the inner thick portion.

·         In a non stick pan, cook pineapple pieces with sugar on a high flame until all the water gets evaporated and you get a sticky texture.
 

·         This is our 1st layer. Keep it aside.

    2nd Layer

       1)      Marie biscuits

      2)      Dates cut into small pieces
 
      3)      Cashew nuts cut into small pieces
No cooking is required for this layer.

3rd Layer

    1)      Milk                                         - 500ml

    2)      Condensed Milk                 - 1 tin

     3)      Sugar                                      - 4tbsp


4)      China Grass                          - 10gm


5)      Water  or milk                                   - 2 cups ( 400ml)

Method:-
This layer requires 10 min of cooking. No Problem. The thought of having a delicious pudding spoon by spoon will energise you. So come on, let’s be fast....

·         Boil milk and  condensed milk together with sugar.



·         Let it cool a bit at room temperature.
·         Dissolve china grass in water or milk( I have used milk) and bring to boil.



·         Add it to the milk and mix well.




This is the 3rd layer. Don't allow to cool this milk mixture completely because it may get set quickly due to the china grass action. So adjust the timing accordingly.
We have to add the 4th layer just after beating the cream. So its better to set all the first 3 layers before that.

Setting of layers

Keep all the required things together.
 
Grease a pudding bowl with 1 small piece of butter.
 
1st layer
Layer cooked pineapple on the bottom of the bowl.
 
2nd layer
Layer marie biscuits followed by dates and cashew pieces.
 
 
3rd layer
Add milk - chinagrass mix on the top of it.
 
4th Layer (Top Layer)
1)      Fresh Cream                                    - ½ ltr

2)      Sugar                                      - 3tbsp

3)      Any flavouring syrup       -  5-6 drops (optional)

  •  In a bowl, beat fresh cream with any flavouring syrup. Syrup is optional. But it will give a colour for the top layer. I have used 5-6 drops of Almond/Badam syrup . Choose one that goes well with the pineapple flavour.
Here's the Badam Syrup.
  •  Fresh Cream
     
  • Fresh cream ,Badam syrup and Sugar ready for beating.
     
  • Beat well
     
  • Add as the top layer into the pudding bowl.
  • I have added 3-4 drops of Pista syrup and moved a spoon gently to get some green lines like this.......
     
  •  
             Garnish with Almonds/Badams.
Refrigerate (not in the freezer)and serve cool.
 
 

I have got these 2 bowls of pudding with the mentioned quantity of ingredients. This can be served for 25-30 . So for a small family, you may take the quantity of each ingredient accordingly.
