Caramel Custard Pudding


Caramel custard is an easy to make dessert with simple recipe, readily available ingredients and minimal making time . Could be considered best for those who wish to set foot into the world of dessert making. It has a creamy custard topped with a silky caramel layer making it fluffy and good in appearence. I am sharing here with you the recipe of caramel custard prepared by steaming. Njoy !!
 


Servings: -5 to 6

Ingredients:-
Milk                                       - 500 ml
Egg                                         - 5
Sugar                                     - 250 gm (or as per your taste)
Cardamom powder                - ½ tsp (optional)

To prepare caramel 
Sugar                                    - 4 tbsp
Water                                     - 3 tbsp water (optional)

Utensils needed:-  
  • A pan for preparing caramel.You can use the same pan for steaming the custard.
  • A pan for steaming custard (on top of caramel layer) ie, custard pan.
  • A steamer / Appachembu for cooking(by steaming) the custard.

So, lets start..

 First of all, lets prepare the caramel layer.
·         Boil sugar and water in a pan and stir continuously till it becomes brown in colour.
I      If you boil sugar alone, then also you will get sweet caramel. But for beginners, its always good to add a little water as it will get burned quickly.
    
       Be careful while handling caramel as it is too hot.

·         Remove from fire and pour it to the custard pan immediately as it will get moulded soon.

·         Try to spread it evenly on the pan.Dont worry even if it doesn’t spread fully, as the steaming will help to spread the caramel.

            Now the caramel is ready. Keep the pan aside.
      After cooling, caramel will have some cracks.Dont bother about that.....

     Now, lets go for the custard part....
·         Boil the milk and let it cool.

·         Beat egg and sugar together in mixer and mix it with the milk.


 
·         
          Add ½ tsp of cardamom powder.(optional)
·         Pour the egg milk mixture into the custard pan (with caramel syrup).




I        Now, we can go into the real part of cooking...

         I am using this steamer/ idli chembu for cooking the custard.

             Sorry for the  " beauty " of this steamer . It is the poor victim of my " induction cooking experiments"!!! Please forgive me ....

       Pour some water and put a ring in it to place the custard pan.     




         Close the custard pan with a firm lid and then close the steamer.


        
·         Once the steam comes, lower the flame and cook for 10- 15 minutes. 
       Switch off the flame and keep it inside for another 5 min.
      Take it outside and let cool at room temperature and then in the refrigerator (not freezer).

      Use a plate to turn it upside down.
