Vegetable Stew is a healthy, easy to make dish in which vegetables are cooked in a thick and creamy coconut milk based gravy. This is the perfect combination with appam and is an apt choice as a starter curry for kids.
Ingredients
Potato, cut into small
cubes - 1 cup
Carrot, cut into small
cubes - 1 cup
Beans, cut into ½ inch
pieces - 1 cup
Macaroni -
½ cup ( optional)
Onion , chopped -
2 big
Green chillies -
2
Tomato, cut into small
pieces - 1 big
Curry leaves -
a few
Any oil -
1 tbsp
Salt -
to taste
Water -
1/2 cup
Thick Coconut milk - 3
cups
Garam masala -
½ tsp
Method:-
·
In a pressure
cooker, heat 1 tbsp oil.
·
Sauté
onion, green chillies and curry leaves for 2 min.
·
Add tomato
and sauté till it gets blended. Add salt to taste.

Add
vegetables and macaroni and sauté for 2 min. Add 1/2 cup of water.
·
Close the
lid and cook.
·
Switch off
the flame after 1 whistle. Let the pressure release normally.
·
Then open
the lid, add coconut milk and garam masala , mix well ,taste and adjust the
salt and switch on the flame.

Once it
starts to boil, switch off the flame.
·
Garnish
with coriander leaves and serve hot.
Tips :-
·
Sautéing
the onion too much will make the stew a light brown in colour rather than a
white colour. So, sauté only for 2 min.
·
If you
want to have a yellow colour vegetable stew, you can add ½ tsp of turmeric
powder also.
