Chinese Prawns Noodles



Chinese noodles are generally healthy, but it all depends on what you include with them. Here i am sharing with you a simple recipe of Chinese Prawns Noodles mixed with vegetables. As all ingredients are blended with sauces, kids will     love it and this is an easy way to get them to eat more vegetables.







Ingredients:-

Cooked Prawns   (big or medium)          -   200 gm

Carrot (cut into strips)                               - 1 cup

Beans (cut into strips)                               - 1 cup

Chopped cabbage                                    - 1 cup

Egg                                                              - 2 (optional)

Chinese Noodles                                        – 500gm

Finely chopped garlic                              – 1 tbsp.

Finely chopped ginger                            – 1/2 tbsp.

Capsicum/Bell Pepper (cut into strips) - 1 small             

Chopped spring onion                              – 1 cup (1/4" pieces cut slanting.)

Green chilli sauce                                      – 1 tbsp.

Soya Sauce                                                  - 1 tbsp.

Oil                                                                 - 4 tbsp.

For Garnishing

Spring Onion (cut diagonally) - 1 cup

Servings:  5                 Prep Time:  20 min               Cook Time: 10 min.

Note: For Chinese cooking, the cook time is very less as compared to the preparation time. It is very important that all the ingredients should be ready when we start cooking.
 
Step 1:-

·         Add pepper powder and salt to the egg, prepare an omelette and cut into thin pieces.

·         Boil noodles in double quantity of water .Add 1 tsp oil into it to avoid sticking.

·         Add salt to taste.

·         Once they are done, immediately drain in a strainer and rinse with cold water to prevent the noodles from cooking further. Drain again.

Now, all the ingredients are ready for mixing. We can switch on the flame and start cooking.

Step 2:-

·         In a non-stick pan with thick bottom, heat 4 tbsp oil, add garlic and ginger and sauté for a minute.

·         Add the vegetables, toss well and cook for 1 minute.

·         Add capsicum and sauté for 2 min.

·         Add spring onion.

·         Add pepper powder and mix well.

·         Add egg pieces and prawns and mix together with the veggies.

·         Add salt to taste. Be careful that all these sauces are salty.

·         Toss noodles once before adding them to the pan.

·         Add Soya sauce and Chilli sauce.

·         Mix well to coat all the noodles.

·         Taste and adjust any of the sauces.

·         Garnish with thin long pieces of spring onion.

·         Serve hot.
 
       Tips

·         While boiling in water, don’t overcook the noodles as it may become mushy when mixing with vegetables.

·         If the noodles are overcooked, place some ice cubes on top of the noodles while rinsing to make the water even colder. It prevents the noodles from sticking together and gives them a firmer texture.
 
·         Use any sunflower oil for better taste.

·         Use fresh vegetables.
