Chettinad Mutton Curry


 
 

 Chettinad cuisines are famous for its spicy taste and aromatic flavour.  Chettinad mutton curry is a spicy, semi gravy preparation and is my most favourite mutton dish.

Once you try this , you will never choose any other option for mutton. So enjoy!!Here is the recipe...
 



 


INGREDIENTS:-

 
Mutton                                                - 500 gm
Shallots (kunjulli)                             - 50 gm
Ginger                                                  - ½ inch piece
Garlic                                                     - 8 pods
Cloves   (Grambu)                            - 2 no’s
Cinnamon (Karukapatta)              - 1 inch piece
Fennel  (Perumjeerakam)            - ¼ tsp
Cumin seeds (Cherujeerakam)  - ¼ tsp
Pepper corns                                     - a few
Chilli powder                                      - 1 tsp
Coriander powder                           - 1 tsp
Salt                                                         - to taste
Turmeric powder                             - ¼ tsp
Onion (large, finely chopped)     - 1
Mustard seeds                               - ¼ tsp
Curry leaves                                   - a few
Tomato (sliced)                   - 1 big
Method:-
·         Clean and cut mutton into medium size pieces.
·         Grind together shallots, ginger, garlic, spices, pepper corn and all powders into a coarse paste.
·         Marinate the mutton with the above paste and salt for at least 30 min.
·         Heat a tbsp of oil in a pressure cooker.
·         Add the marinated mutton.
·         Pressure cook up to 5 whistles.
·         Heat oil in kadai.
·         Splutter mustard seeds.
·         Add curry leaves and chopped onions, and sauté, till they become golden brown.
·         Add slices tomatoes and sauté, till they become soft.
·         Add the mutton to it and cook, till the oil separates.
Tips
       ·         The more time you keep the mutton pieces marinated, the better would be the taste.
·         Use coconut oil for better taste.
