So today, I have prepared spinach/cheera thoran for my lunch. This is one of the best combination with rice and I love its taste when chewing with rice. It is very easy to prepare and I am sure you also will love it !!

Ingredients
Cheera / Spinach - 4 cups
Grated Coconut - 1 cup
Chopped Shallots/ Kunjulli - 1 cup
Green chillies - 2
Turmeric powder - ½ tsp
Mustard seeds - 1 tsp
Curry leaves - a few
Coconut Oil - 1 tbsp
Salt - to taste
Step 1 Grated Coconut - 1 cup

Clean the spinach/cheera leaves, drain the water well and chop finely.
Step 2
Heat the coconut oil in a thick bottom pan and splutter the mustard seeds.
Step 3
Saute the curry leaves , chopped shallots and chopped green chillies.

Once it is done, add the grated coconut , turmeric powder and the salt to taste.Saute well.
Step 5
Add the spinach/cheera leaves and mix well. Cover and cook on a low flame for 1 min.

Remove the lid and continue cooking till done in the low flame itself.
Tips
Dont overcook the leaves as it will lose its original colour.
